Ingredients
125g Fairy Cooking Margarine, well softened (partially melted), plus extra for greasing
2 large eggs, at room temperature
¾ cup (115g) self-raising flour
½ cup (110g) caster sugar
Zest and juice of 1 lemon (approx. ¼ cup)
½ cup store-bought or homemade lemon curd
Icing sugar and extra lemon zest, to decorate
Double cream or ice cream, to serve
Method
Grease a 1L capacity microwave safe dish (using extra Fairy).
Using electric beaters, beat Fairy, eggs, flour sugar, flour, lemon zest and juice in a large bowl for 2 minutes or until creamy.
Spread lemon curd over the base of the prepared dish, then spoon pudding mixture gently over lemon curd and smooth the top.
Microwave at 850w for 3-4 minutes. Leave to rest for 2-3 minutes before serving.
To serve, dust with icing sugar and some extra lemon zest. Spoon into bowls while warm and finish with a dollop of cream and/or ice cream as desired.
