Looking for an delicious brandy cream recipe? This light and fluffy brandy cream is the ideal accompaniment to warm Christmas Pudding and mince pies.

Makes approx. 1 cup


  • 175g Fairy margarine, softened
  • 175g icing sugar mixture, sifted
  • 1/3 cup brandy


  1. Place Fairy margarine and icing sugar mixture into the bowl of a stand mixer fitted with a whisk attachment
  2. Beat using medium speed until mixture becomes pale and creamy
  3. Gradually add brandy, one teaspoon at a time, beating well between each addition
  4. Spoon into a serving bowl and serve with Christmas pudding

Tips & Hints:

  • Fairy brandy cream can be made 2 days ahead. Store in a sealed container in the refrigerator. Stand at room temperature for 15 minutes to soften slightly before serving.
